Instructions
Marinate the Mutton
Start by thoroughly cleaning the mutton pieces and patting them dry.
10 kg mutton
In a large bowl, combine the red chili powder, coriander powder, garam masala, and salt. Mix well.
15 teaspoons red chili powder, 15 teaspoons coriander powder, 6 teaspoons Garam masala powder, Salt to taste
Sprinkle the spice mixture generously over the mutton pieces, ensuring they are evenly coated. Allow the mutton to marinate while you prepare the rice.
Secure the marinated mutton on the iron rod stand using thin wires.
Prepare the Rice
Prepare the rice by washing and soaking it in water for 30 minutes.

Heat oil in a separate pan and add spices. Fry until fragrant.

Add the soaked rice to the pan, place the rice pan at the bottom of the tandoor, and position the iron rod stand inside.
Dum Cooking
Seal the tandoor with a large lid, and cover the lid edges with cloth first and then soil from the sides. Allow the mutton to cook in the tandoor for 1 hour and 50 minutes, letting it absorb the smoky flavors and tenderize.
Once the mutton and rice are cooked, carefully remove them from the tandoor. Garnish the rice with cashew nuts and raisins to enhance both flavor and presentation.
