Ingredients
  

  • 1 kg mutton pieces
  • 4 onions finely chopped
  • 4 tomatoes chopped
  • 4 green chilies slit
  • 2- inch piece of ginger julienned
  • 8-10 garlic cloves minced
  • 2 tablespoons mustard oil
  • 2 teaspoons cumin seeds
  • 4-6 dried red chilies
  • 2 bay leaves
  • 1 tablespoon coriander powder
  • 1 teaspoon turmeric powder
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions
 

  • Marinate the Mutton:
    In a bowl, marinate the mutton pieces with salt, turmeric powder, and half of the chopped onions. Let it marinate for at least 1 hour.

  • Prepare the Masala Paste:
    Heat mustard oil in a handi or deep-bottomed pot over medium heat.Add cumin seeds, dried red chilies, and bay leaves. Let them splutter.Add the remaining chopped onions and sauté until golden brown.Add minced garlic, julienned ginger, and slit green chilies. Sauté for a couple of minutes.Add chopped tomatoes and cook until they turn soft and mushy.Once the masala is cooked, remove it from heat and let it cool.Transfer the cooled masala to a blender and blend into a smooth paste. Set aside.

  • Cook the Mutton:
    In the same handi, heat a little more mustard oil if needed.Add the marinated mutton pieces and cook on high heat until they are well browned on all sides.Reduce the heat to low and add the prepared masala paste to the handi.Mix well to coat the mutton pieces with the masala.Cover the handi and let the mutton cook in its own juices, stirring occasionally.

  • Simmer and Garnish:
    After about 45 minutes to 1 hour of cooking, check the mutton for tenderness. If needed, add a little water to adjust the consistency of the gravy.Once the mutton is tender and cooked through, garnish with fresh coriander leaves.Serve hot with steamed rice or chapatis.
